Bacon, Egg, and Cheese + Spinach
If a breakfast sandwich gets you out of bed in the morning, going homemade can take it from a greasy indulgence to a nutritious meal. Opt for whole-wheat bread, lean turkey or Canadian bacon, and just a sprinkling of your favorite cheese. Then, reach for leafy greens for an extra dose of nutrition. Fresh spinach won’t alter the taste of your sandwich, but will add a hefty dose of vitamins A and K, as well as manganese and folate.
Of course you can’t stop at the drive-through for this one. However you can make 5 in the same time as one since you are cooking anyway and put 4 in the freezer without the spinach. Take it out the night before. it will be thawed by morning. Pop it in the toaster oven for a few minutes, add the spinach and breakfast is awesome. Next page has more ideas.
