Just the other day while out for a walk,  I saw some Girl Guides toting their wagons of boxed cookies, going from door to door. I was immediately reminded of those famous mint chocolate cookies. Although they are delicious, they aren’t the greatest when it comes to clean eating. I stumbled upon this recipe a while back and I absolutely loved these! They are a great clean alternative to Girl Guide Cookies. Who doesn’t like mint and chocolate?

Here’s the recipe:

Ingredients: Base Layer

  • 1 Cup Raw Almonds
  • 1 Cup Dates
  • 1/4 Cup Raw Cacao Powder
  • 1/4 Cup fresh Mint leaves (optional)
  • 1/2 tsp. Peppermint Oil
  • 3 Tbsp Coconut Oil melted

Top Layer

  • 1/4 Cup Coconut oil
  • 1/4 Cup Raw Cacao Powder
  • 1 Tbsp Pure Maple Syrup
  • Few dashes of peppermint oil


Base Layer:

  1. Blend Almonds in a food processor until finely chopped or course meal.
  2. Add the rest of the base layer ingredients ingredients, EXCEPT the coconut oil. Process until well combined.
  3. Then add the coconut oil, process until mixture is well moistened.
  4.  Line a bread pan with parchment paper, and dump the base layer contents into the pan. Spread evenly and press down firmly to mold.
  5. Pop it in the freezer.

Top Layer:

  1.  In a small sauce pan, on low heat, melt coconut oil and  whisk the top layer ingredients until smooth.
  2. Pour over chilled bottom layer and return to freezer.
  3. Let set for min 1 hour or until hardened.
  4. Cut and Serve!

* Sometimes, for a fudgier brownie base, I like to soak and drain my dates in warm water for 10 mins before throwing them in the food process. They are much softer and give more of a fudge consistency.

* I’ve also substituted the pecans for the almonds, which does give it a richer taste.

I like to keep thin mint cookies cut into little pieces saved in my freezer for a rainy day or am upcoming holiday. I hope you enjoy this healthy tasty treat.
